  • 1 1/2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 2/3 cup of Sugar
  • 1/3 cup of Vegetable Oil
  • 1/4 cup of Milk (you can also use almond or soy milk)
  • 1 1/2 cup of Fresh Mango Puree
  • 1 tsp Vanilla Extract

For the Frosting:

  • 1 cup Powdered Sugar
  • 1/4 cup of Butter, Softened
  • 1/4 cup Fresh Mango Puree
  • 1 tsp Vanilla Extract
  • Dash of ground cardamom

Instructions:

  1. Preheat the oven to 350°F or at 180℃. Line a 12-cup muffin tin with paper liners.
  2. In a medium mixing bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate mixing bowl, whisk together the sugar, vegetable oil, milk, mango puree, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients in batches, mixing until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
  7. Remove from the oven and let cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.
  8. To make the frosting, cream the butter with the powdered sugar,in a mixing bowl until creamy.
  9. Add the mango puree, vanilla extract, and ground cardamom and mix until well combined.
  10. Spread the frosting onto the cooled cupcakes.
  11. If you want garnish with fresh mango slices or a sprinkle of ground cardamom.

  • Food coloring (optional)
  • Assorted sprinkles

Instructions:

  1. Preheat the oven to 350°F or at 180℃. Line a baking sheet with parchment paper.
  2. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate mixing bowl, beat the butter and granulated sugar until creamy.
  4. Add the yogurt, vanilla extract, and milk and beat until well combined.
  5. Add the dry ingredients to the wet ingredients in batches, mixing until just combined.
  6. Cut out separate balls from the dough in separate bowls and add colors to each of them. Flatten each ball with a fork.
  7. Bake for 10-12 minutes, or until the edges are lightly browned.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, whisk together the powdered sugar and milk in a small mixing bowl until smooth.
  10. You can add food coloring to the frosting and mix until well combined. (You can mix and match with the colors of cookies.
  11. Dip each cookie into the frosting, then sprinkle with assorted sprinkles.
  12. Let the frosting set for 10-15 minutes before serving.

Vegan Thandai

Ingredients:

  •  4 cups Unsweetened Milk (you can also use almond or soy milk)
  • 1/2 cup Blanched Almonds
  • 1/4 cup Cashews
  • 1/4 cup Melon Seeds
  • 1/4 cup Dried Rose Petals
  • 1/4 cup Fennel Seeds
  • 1 tbsp Poppy Seeds
  • 1 tsp Ground Cardamom
  • 1/2 tsp Ground Cinnamon
  • 1/2 cup sugar (or natural sweetener of your choice)
  • Ice cubes
  1. Instructions:
  2. In a large mixing bowl, soak the blanched almonds, cashews, melon seeds, and dried rose petals in 2 cups of water for 2-3 hours.
  3. Drain the water from the soaked ingredients and transfer them to a blender.
  4. Add fennel seeds, poppy seeds, cardamom, cinnamon, black pepper, and 1/2 cup of water to the blender.
  5. Blend the ingredients until smooth and creamy, adding more water as needed.
  6. Strain the mixture through a fine-mesh sieve or a cheesecloth to remove any solids.
  7. In a large mixing bowl, whisk together the milk and sugar until well combined.
  8. Add the strained thandai mixture to the milk mixture and stir until well combined.
  9. Chill the thandai mixture in the refrigerator for at least 2 hours.
  10. To serve, pour the thandai into glasses filled with ice cubes.
  11. Garnish with a sprinkle of ground cinnamon or chopped nuts if desired.
